I’m not kidding when I say I make this sweet potato casserole every Thanksgiving. The sweet potato filling has a fluffy texture that is the perfect cloudy base for the sweet and crunchy oat streusel filling. Serve it with other sides like mashed potatoes, cranberry sauce, and quinoa filling, then finish off the night with vegan no-bake pumpkin pie!

Not only are sweet potatoes filling and delicious, but they also contain immune-boosting vitamins A and C (notice that orange color!). Also contains dietary fiber and potassium. It’s both healthy and comfort food!

Compared to pink potatoes, sweet potatoes are similar in calories but contain more fiber. Additionally, one medium sweet potato provides about 700% of the recommended daily value of vitamin A, while pink potatoes contain none. Sweet potatoes contain almost twice the amount of vitamin C compared to Russians.

As impressive as this dish looks and tastes, you’ll be surprised how easy it is to prepare.

1. Prepare sweet potatoes. They are done when a knife easily goes through the thickest part of the largest sweet potato.

2. Cut the sweet potatoes in half and peel off the skins. When the sweet potatoes are cool enough to handle, cut each one in half and carefully remove the skins with your hands. The skin falls off very easily. Discard the skin.

3. Add sweet potatoes, maple syrup, butter (or coconut oil), cinnamon, vanilla and salt to a bowl. Mash the potatoes or use an immersion blender to achieve a creamy, whipped texture.

4. Pour the mixture into a lightly buttered or coconut oiled pan (for reference, mine measures 10.5 x 8 x 1.75 inches). Using a spatula, completely cover the bottom and spread the mixture evenly.

5. Prepare the top. Add all chopped filling ingredients to a small food processor and pulse until well combined and the sunflower seeds are chopped. I like a finer texture so I usually pulse a few times to achieve it.

8. Serve immediately or store in a covered container in the refrigerator for up to 5 days. Reheat in the oven before serving.
