A roasted turkey will keep in the refrigerator for about 3 to 4 days, so I recommend making this soup about 1-2 days after your Thanksgiving dinner. So if you have leftover soup, the beef will keep for a few days.
We like to serve ours with a slice of French bread or wholemeal cornbread. Lion’s House rolls are the tastiest next to the house since Thanksgiving.

Keep the soup in a freezer in the refrigerator for about 3-4 days. Turn the stove back on over high heat, until the soup is warm all around. You may need to add more broth or stock if the soup is too thick.

Every year I buy a little turkey for Thanksgiving to make sure I have less leftovers. My personal preference is for a little beef because it cooks faster and doesn’t dry out too much.
Hearty Barley Turkey Soup Recipe
Since I don’t have enough, I use leftovers. So, this year I decided to finally share some of my turkey recipes. This easy and delicious turkey soup tops the list because it’s so easy and requires almost no ingredients.
It’s a shame that we just throw leftover beef in the microwave and recreate a small version of our Thanksgiving meal. There is a lot of room for imagination and there are all kinds of ways to make interesting and tasty meals from leftover meat.
Any dish with chicken can be made with beef, so the ingredients can be substituted for chicken and beef.
Nourishing Turkey Bone Broth (in Slow Cooker)
While tossing fresh turkey into a sandwich or salad may seem like the norm, I don’t think the meat should be. To make beef as easy as possible, I’m a big believer in cooking it in a pie, soup or stew.
This keeps the beef tender and infuses it with moisture while keeping the leftovers out. To really pull it off more than once a year, try freezing leftover turkey for up to 6 months for later use (although it’s less good after three! ).
I always start my soup base with three main vegetables. Onions, celery and carrots with a selection of herbs and this time I went with fresh thyme. I still have leftovers from the big thanksgiving feast. You can use dried thyme as well.
Turkey Broth Recipe
The recipe for this turkey soup recipe is based on a classic chicken noodle soup but I added a little kick. In addition to the homemade corn meal, I add beef slices and instead of the usual egg noodles I throw in half a cup of giant couscous called Israeli couscous or pearls. couscous.
Large couscous is a great choice because it tastes like pasta, looks good and is so much fun to eat! If you can’t find it, regular noodles will work just as well.
When I say these soups are easy I am not exaggerating! The process is very easy and only takes 30-35 minutes to do. The beef was pre-cooked and the vegetables and couscous cooked quickly!
Leftover Turkey Soup Recipe {with Homemade Turkey Broth & Vegetables}
There are a few things I would like to mention that will make this turkey soup recipe even more delicious. I start by sauteing the vegetables in a mixture of olive oil and butter. Use butter! It adds an amazing flavor.
I like to use homemade stuff made using leftover turkey carcasses and spices. You can use prepared or cubed stock, including chicken stock. Not everything has to be done at home. I usually choose a stock cube myself.
Fresh herbs such as thyme or rosemary and bay leaves add a wonderful aroma and flavor to the broth.
Southwest Leftover Turkey Soup
Large couscous only takes 10 minutes to cook like pasta, so I throw it in the broth after boiling. I take the soup off the heat when the Israeli couscous is soft.
This hearty soup is delicious on its own or with a bread roll. However, if you want something more adventurous, try the garlic cheesy rye toast.
All you have to do is slice the toasted rye, homemade sourdough or bread of your choice with a clove of garlic cut in half lengthwise. . Sprinkle with your favorite sauce and bake in the oven or toaster oven until melted and golden.

Leftover soup can be stored in the refrigerator for 3-4 days or it can be stored for up to 3 months, in the freezer.
Although the microwave is an option, the best way to reheat the soup is in a pot on the stove. Keep the lid on the pot to keep moisture and bring the soup to a constant boil.
There is only one more practice left. So, if you eat a lot on certain days, only burn what you expect to eat soon. If frozen, it’s best to store them separately.
