5. Onions are browning too quickly – turn off oven and cover with foil for remaining cooking time. Then remove the foil for the last few minutes to crisp up the onions. That’s why it’s important to fry the onions only until lightly golden, so they’re golden and crispy after frying!

6. Making ahead is the best way: Boil the beans and prepare the sauce according to the recipe. Cover immediately, let cool and store in the refrigerator for up to 3 days (possibly longer, I just made it for 3 days). Fry the onions the day before and let them cool completely before placing them in a container. Do not store in the refrigerator! The same day, toss the beans with the sauce, place in a baking dish, COVER and bake for 10-15 minutes to warm through. Remove the lid, cover with the onions and cook for 10 minutes until the onions are crispy and golden brown!

8. Serving Size – Really depends on how many extra sides you have! Conservatively, this could easily serve 8-12 people with, say, 3 or 4 other sides (i.e. one large spoonful per person). If this were the only vegetable side dish, I would say it serves 5 people (150g beans per person).

Feeds 8 people, the onions used for the filling are supposed to contain 2 tablespoons of oil, which I think is a reasonable estimate (since onions don’t absorb oil).
