So these Stuffed Acorn Squashes were super easy to make with just a few ingredients. I first roasted the squash in the oven for a while to get them nice and soft, then I filled them with fried sausage, mushrooms, a little thyme and a sprinkling of parmesan. I put them back in the oven for a while to melt the cheese. They were gods!

I want to give you a quick tip on cutting these squashes in half. The last time I used acorn squash, I tried to cut them into rings and I cut my finger, so I was a little afraid to eat with them again. So before I cut them in half, I put them in the microwave for 4 minutes. It softened them just enough that they could easily be cut in half.
