When we realized we could make our favorite sweet potato casserole in the crockpot, we were sold. We make this every holiday now and it couldn’t be easier or tastier!

There are many ways to jazz up a classic casserole. Try swapping marshmallows for a pecan streusel topping by mixing together chopped pecans, brown sugar, melted butter and cinnamon. Sprinkle over the casserole during the last hour of cooking.

Make the sauce: Combine 1½ cups brown sugar, 6 tablespoons unsalted butter, 2 tablespoons water, 1 teaspoon ground cinnamon, and 1 teaspoon pure vanilla extract in a crockpot.

Boil the potatoes: Add 4 pounds of peeled and diced sweet potatoes and stir to combine again. Cover and cook for 3 ½-4 hours or minimum 6-8 hours or until sweet potatoes are tender. Stir every hour to prevent burning.

Add the toppings: Combine 2 cups marshmallows and ½ cup pecans, then sprinkle the remaining ½ cup pecans and 1 cup marshmallows on top.

You are sweet potatoes. For this recipe, I used canned sweet potatoes. Usually, it is stored in sugar syrup, so it starts off with a sweet taste. However, we removed all the liquid.

If you don’t want to use canned sweet potatoes, you can use fresh. I cook it and let it cool, then remove the skins and puree in a food processor before using.

Butter Butter adds fat to the recipe and gives you a really creamy, indulgent mouthfeel. It also adds moisture, keeping the dish creamy rather than dry.

I always use unsalted butter, so I can add as much or as little salt as I want later.

The milk The milk helps add a small amount of fat and adds some moisture to the creamy texture.

Skinny Sweet Potato Casserole

Sugar. We use a combination of white sugar for sweetness and brown sugar for some deeper slightly molasses notes.

If you don’t have one type of sugar, you can use all white sugar or all brown sugar. If you don’t want to use sugar, you can add orange juice or a little maple syrup.

Spices. We go with the traditional spices of autumn, cinnamon and nutmeg. You can also use pumpkin pie spice if you have it.

Gluten free all-purpose flour. I use regular 1 to 1 gluten free all-purpose flour. If you are not gluten free, you can use regular flour.

Pecans are a traditional Thanksgiving ingredient and add a wonderful crunch to contrast with soft sweet potatoes.

Kosher salt. Salt helps balance the sweetness, so you don’t get an overly sweet experience. You don’t need much, 1/2 teaspoon of salt will do the trick!

The first is the type of sweet potato you are using. If you cook potatoes and mash them, the potatoes may absorb some of the water as they cook. Then the water is released while the casserole is cooking. Avoid this by using canned sweet potatoes or baked sweet potatoes.

Second is the recipe itself. You’ll want to use a binder like eggs to help hold everything together. And don’t add too much liquid.

This crockpot recipe is great to make the day before! You can make your sweet potato mixture and put it in a mixing bowl. Cover it with plastic wrap and refrigerate until the next day. Then pour into the slow cooker, add the topping and cook.
