What do you like best: real holiday dinner or leftovers? ? While enjoying a hearty and special meal, I think it’s fun to use leftovers in a different and creative way. And while a classic turkey noodle casserole is always a hit, sometimes it’s nice to try something else.
I love soup and here I am sharing my favorite recipe for using up leftover turkey (and roast chicken, for that matter). It’s creamy but not heavy, packed with delicious veggies, and is great on a cold day!

Easy Leftover Turkey Soup
Ingredients for Leftover Turkey Soup: Broth, cooked turkey meat, mushrooms, potatoes, carrots, celery, onion, corn, wild rice, butter, flour, Italian seasoning, olive oil half and half, garlic, salt and pepper.
Other Leftovers: If you have leftovers similar to the ingredients used here (for example, if you have creamed corn (not the fully blended/canned kind, but corn in a creamy sauce), feel free to use it. it instead of corn kernels.
You can also use leftover creamy mushroom sauce or sautéed mushrooms in place of fresh ones.

If you have roasted or glazed carrots… cut them up and throw them in the last 10 minutes of cooking rather than using them fresh as well.
1. Sauté the onion and celery in butter and olive oil until completely soft – I recommend waiting 4 to 5 minutes for this step over medium heat, for better flavor development.
