To make this recipe, you’ll need a decent fleshy squash that weighs about 2 to 2.5 pounds. You will also need 2 cans of chopped green beans. There’s a creamy baked sauce that has sautéed vegetables in it, made with almond milk, ghee, rosehip flour, chicken stock, and a few common spices. Butternut squash and green beans are lightly sprinkled with almonds, and slivered almonds work best.

The butternut squash is roasted first and then added to the 8×8 baking dish with the green beans. My baking dish of choice for this and many other baking recipes is my Duraglass 8×8 baking dish from Ello. Next, you will need to prepare homemade chicken cream. To do this, first melt the ghee in a pan over medium heat. When it melts, slowly stir in the flour. Continue to whisk in the flour and ghee until a paste forms.

Then slowly whisk in the almond milk and chicken broth. Whisk continuously until the liquid is incorporated into the flour mixture and begins to thicken. This will take about 5 minutes and then the cream of chicken stock will be thick and boiling.

Pour the cream of chicken into an 8×8 baking dish and mix it into the squash and green beans. Spread the vegetables in an even layer on the baking sheet, then add the slivered almonds to the top of the casserole. Now all that’s left is to bake! Place in the oven and bake for 35 minutes or until the buttercream is done.

This recipe is already full of vegetables, but there are a few simple changes to make it completely vegetarian/vegan and ghee-free. Instead of chicken stock, substitute an equal amount of vegetable stock. Instead of ghee, which is clarified butter, you can use a vegan butter of your choice or simply substitute an equal amount of oil, such as olive.
