Sweet Potato Broccoli Egg Casserole

To help the vegetables soften quickly, peel and cut the sweet potatoes into small cubes, about half an inch in size. Cut the broccoli into small pieces.

Once the pan is hot, add the potatoes and broccoli and cook for 8-10 minutes or until the potatoes are tender. Stir occasionally to prevent sticking.

NOTE: If using vegetables that are still cooking, add them to the pan and cook until heated through. This should only take a few minutes as it will continue to heat up while the frittata cooks in the oven.
