I can’t believe Thanksgiving is next week! I’m not ready at all. November has been a terrible month so far. I’m totally tired and didn’t feel like cooking/baking at all. After struggling for a while, I finally got my act together and made this amazing Brussels sprouts side dish.

As a child, I never saw or heard of Brussels sprouts. It was not a common vegetable in Hong Kong. Probably not even today. When I first saw them in US supermarkets, I was hooked. They are very similar to a mini version of cabbage. They are absolutely adorable. However, many people do not like Brussels sprouts and find them bitter. I guess it just depends on how you make them. If done right, they taste just as fantastic as any other vegetable.

These curried Brussels sprouts are roasted to a dark golden brown. They are tender with some crispy leaves and edges. They are then tossed in curry powder. Curry powder is the best thing to happen to Brussels sprouts. Aromatic, earthy and spicy. It also helps mask the bitterness of Brussels sprouts. Finally, sprinkle a bunch of dried cranberries on top. The sweetness and tartness of dried cranberries goes well with curry and Brussels sprouts. This is such a simple dish that it can be prepared in 45 minutes.
