Stuffed Delicata Squash Ground Turkey – Delicata squash stuffed with ground turkey, zucchini, ginger, and spinach is a balanced meal, perfect for fall and winter! This recipe is perfect for those on a paleo, whole30, Low-FODMAP, or AIP diet.

Stuffed Delicata Squash Ground Turkey
For this zucchini fritters recipe, I prepare my own zucchini and ground turkey ribs and use them for the squash fritters.
Wild Rice Stuffed Acorn Squash
Place the delicata squash on a cutting board and use a sharp knife to cut off the ends and tails of the squash.
Drizzle the squash with avocado oil (or very hot oil) and spread your hands over the exposed flesh to seal well.
Place the squash cut side down on a large baking sheet. Bake for 30 to 40 minutes, until the squash is very tender when pierced with a fork.

Once the squash is cooked, the turkey pan is ready, just spoon the turkey mixture onto each half of the squash and serve!
If needed, add more bowls of food if you get really hungry! Otherwise, this recipe should serve three to four people.

Can this recipe be made ahead of time? Really! I highly recommend canning the squash ahead of time. You can put everything in the delicata squash and leave it in your fridge until you are ready to cook it. It can also be cooked ahead of time and reheated when ready to eat
Can this recipe be reheated? Of course, this recipe is also delicious when reheated.
These squash will keep for up to 4 days in the refrigerator. We didn’t try to freeze them.

In fact, we don’t eat a lot of meat in our house. I’m not a big fan, and happily, Larry, who is a big fan, likes to get his steak, chorizo and pork, at restaurants. But, every now and then, I sit for a moment by the stove and think about chicken meatballs or dream about the smell of my favorite ragu simmering on the stove. And sometimes, even though quinoa, farro, or chickpeas are so good, I’ll stop at the farmers market, look at a big bag of goodies, and know I need to fill them with ground turkey.

The season is winding down for dessert, my favorite winter squash. It doesn’t take long to be like buttermilk or spaghetti, which I think is a great meal every September. I love that desserts don’t need to be peeled, they are small enough to cut easily and cook quickly. Usually, I cut them into circles or half moons, put them in olive oil, cayenne and paprika, and cook them until soft and caramelized. They’re great in a kale salad, added to butter, or piled on top of a skillet.
I have never used it as a container. I’m sure I have a mental block for stir-fries – bell peppers, tomatoes and zucchini seem full of things I don’t care to eat. But, last week, at the farmer’s market, and thinking about the fall season of desserts, I wanted to make it a big show. That’s it. I didn’t waste time thinking about the filling because I had a mixture of turkey, apple and onion in my head as I researched to find four shapes that were the same size – long, straight , thinner than the others.
A week later I went back to the store to buy ground turkey. Meanwhile, my mind has returned to a quinoa or two. But then I bought a turkey and honestly.
Stuffed Squash With Ground Turkey And Apples {for Two!}
On Sunday, cut and seed the squash, chop the onions and garlic and leave everything else. On Monday, while Reeve was sleeping, I roasted squash, sautéed onions, and sliced apples. The whole recipe came together so quickly and smelled so good, I couldn’t care less about how everything turned out. Almost immediately. Of course. (Well, maybe I’ll run to the grocery store for some kale and pomegranate to brighten up the rest of the plate, and some food.)
This squash delicata – the taste of onion, apple, wine and pecans, the taste of turkey, sage and cayenne, and a little fat, thanks to the mascarpone that has been spread all over, and it is rich if i want it again. . At least not for a few weeks.
I’m a big fan of mise en place – getting everything ready before you start. But, enjoy this recipe. Once the pecans are toasted, you can put the squash in the oven and start chopping your onions and garlic. Once the onion is cooked, slice the apple. This will speed up the overall cooking time.
Turkey And Vegetable Stuffed Spaghetti Squash
About the mascarpone. If I’m reading a recipe that says, I’m tempted to skip it, but I try not to. The cream will help draw out all the flavors and bind the filling slightly. But, don’t worry (if you, like me, tend to worry about these things), the mascarpone does not result in a creamy filling, as you can see in the pictures.
Depending on the size of your squash, you may need more filling (you should have more than ½ cup left). Put it on rice, wrap it in a tortilla, or if you’re me, eat it straight from the pan and call it breakfast.
