Rubber strap: To fold the battery together, I like a stiff strap like the one from OXO. It fits comfortably in my hand, is dishwasher safe, and heat resistant up to 600 degrees. Both the handle and the head are coated with silicon, making it easy and safe to use my nonstick cookware and bakeware.

The crème de la crème of perfectly baked cookies is this air-conditioned cookie. My cookies bake evenly every time I use these pans. Airbake cookie sheets consist of two layers of aluminum with a layer of air in between. The air layer lowers the temperature of the metal top, preventing the bottom of the cookie from browning too quickly. These pans are very easy to clean. Clean them thoroughly with soap and hot water. It is not recommended to submerge these pans completely in water or put them in the dishwasher.

Brown the butter: Melt the butter in a saucepan over medium heat, stirring constantly. Once melted, the butter will begin to foam. Stir/beat for about 5-7 minutes until the butter turns a deep golden color. Remove the browned butter from the heat and pour into a bowl. Allow the oil to cool for 30 minutes.

Mix the dry ingredients: In a medium bowl, whisk together the oats, flour, baking powder, salt, and cinnamon. Stand aside.

Mix the wet ingredients: In a large bowl, combine the brown butter, brown sugar, and sugar. Beat until the sugar is fine. Add egg yolks and vanilla. Whisk together until smooth. Discard the mixture.

Preheat oven to 350 degrees. Drop two tablespoons of batter onto a baking sheet about two inches apart.

Bake for 12-15 minutes or until the edges are lightly browned but the center is still soft. Allow cookies to cool for at least 5 minutes before transferring to a wire rack.

How to Bake: Mom’s Flat Baked Cookies Turn the cookies while they bake. Place the cookies on the first baking sheet in the bottom of the oven and bake until they start to spread (it usually takes about as long as I do to separate the dough from the second baking sheet.) Transfer the cookies to the first baking sheet and flatten the cookies. Top layer, and turn 180 degrees to finish baking, and place second batch of cookie dough. Place on the bottom rack. Continue this process until all cookies are baked.

After rolling the dough into balls, place them skin-side down on parchment paper and refrigerate until firm. Once frozen, remove from baking paper and place in a piping bag. Label with date and content.

When you’re ready to make the cookies, remove the cookie balls from the refrigerator, let them sit at room temperature while you preheat the oven, and then bake. You may want to add a minute or two to the baking time.

Once the cookies are completely cool, place them on a sheet pan and freeze until firm. Transfer the frozen cookies to an airtight container or zip-top bag. Label with date and content.
