This casserole is different from regular potato casseroles because it uses Cream of Potato soup instead of Cream of Chicken soup. It makes the casserole super creamy and delicious! I used freshly grated parmesan cheese, but you can definitely use canned grated cheese if that’s what you have in the fridge.

This leftover ham breakfast hash consists of sliced ham, leftover sauce or stuffing, leftover vegetables and everything is heated in a skillet together then topped with a fried egg and cheddar cheese.

Ham: Make sure you cut your ham into small enough pieces that you can get a little in each bite.
Dressing: You will need half a cup of dressing or remaining filling. I think bread-based sauces work best here (even corn-based sauces, as you can see in this photo).
Potatoes: You can probably even use leftover mashed potatoes or regular baked potatoes or sweet potatoes if you want as a starch in this hash. And if all else fails, you can use chopped store-bought hash browns.
