I am very happy when I eat lasagna. What could be better than thin noodles covered in rich marinara, chopped vegetables and melted cheese?! This is fine.
Lasagna With No Cottage Cheese

One thing about lasagna is that you will find many classic recipes with three types of cheese involved – ricotta (or sometimes mascarpone), parmesan and mozzarella. This recipe has two types of cheese:

Why not ricotta? Over the years I have found ricotta to be such a heavy ingredient that I don’t like to eat baked pasta regularly. It can compliment a dish or it can overpower it. I’ve also found that many readers enjoy my baked ziti recipe because it’s one of the few baked pasta recipes that doesn’t call for ricotta.

This veggie lasagna is covered with small chopped vegetables that fill the “stuffing” without the extra cheese. And I’m sure you’ll love it as much as I do!
Here is the complete list of ingredients you will need for this recipe: lasagna noodles, pasta sauce, yellow onion, carrots, mushrooms, spinach, garlic, oil, peppers, mozzarella, parmesan and basil new.

When it comes to choosing the right noodles for your lasagna, I know it can be difficult to know which one is the best. Over the years my mother has taught me her tips for choosing the right noodles and how to prepare them properly.

The Tastiest No Boil Lasagna Recipe
Layer in this order: sauce, noodles, grilled and roasted vegetables, chopped fresh basil, sauce, mozzarella and parmesan. Repeat.

Preheat oven to 375F. Cover the baking dish with foil and bake for 20 minutes, then remove the foil and bake for another 20 minutes uncovered. Reduce to HIGH for the last minute to brown the cheese.
Types of peppers to use: We like to use baby peppers in this recipe because they are so flavorful and require little preparation! Just remove the stems after baking and cut them into small pieces. You can also put a regular bell pepper in the first place, but remove the core and the slice before roasting.

The Easiest No Boil Lasagna
Use fresh basil – not dried: We like to top our family’s lasagna with tons of fresh basil. We do not recommend using dried because it will not taste the same as fresh. If you want to add more flavor, top with 2 tablespoons of chopped fresh oregano! Very well.
Sauces to use: If you are making a homemade sauce for your lasagna, we recommend using my family’s famous san marzano tomato sauce or using fresh tomato sauce! You can also save time and use my family’s favorite store-bought marinara.

You can use a lot of vegetables: we used tons of different vegetables in this recipe. We like to use cauliflower, broccoli, zucchini and leeks. Make sure that the vegetables are cut very small when putting the lasagna.
Million Dollar Lasagna
Brighten after baking: you can bake the lasagne and let it cool. Cover with several layers of plastic wrap and wrap tightly in foil. Refrigerate for up to one month. Remove and thaw at room temperature. Cover with foil and bake at 375 degrees until heated through.

Make it before baking: Prepare the lasagna, then cover tightly with plastic wrap and foil. Incubate for 1-2 months. When it’s ready to bake, let it thaw at room temperature. Then bake according to the recipe instructions.
Keep leftovers fresh: store leftovers in an airtight container for up to 3-5 days in the refrigerator. Reheat in the oven until covered with foil at 375 degrees F.

This recipe makes 4 healthy, good-sized servings of lasagna. I used a 25cm x 15cm rectangular baking dish. If your plate is the same size, it should be fine.
I recommend using a dish close to the one I used so you don’t run the risk of not having enough Bolognese ragu, as this recipe is for a small batch of lasagna.

I have served this lasagna recipe to many people and everyone always comments on how rich the meat is and how good the homemade white sauce is!
Preheat the oven to 180 degrees C / 350 F. In a medium pan, heat the onion and garlic until translucent. Add the mince, using a spatula to break up any lumps. Cook for 3 to 4 minutes. Add the grated carrot and zucchini and cook for 2 to 3 minutes.

Keep the heat on high, stirring occasionally until the liquid reduces (about 3 – 5 minutes). Once the liquid has reduced, remove from heat, cover and set aside.
