I want everyone to know that they can enjoy tradition and make healthy choices. After all, no one wants to feel like they’re missing out on a vacation.
For me, one of these important traditional foods is butter. I didn’t want to miss it on Thanksgiving. That’s why I created this low-carb condiment almost ten years ago. I’ve done it every year since!
Over the years I have seen many keto or low carb filling recipes. Most look too complicated to me (even if they look delicious). When I developed my recipe, I knew I wanted something that was easy to make.
Easy Keto Pork Stuffing Recipe (pork Sage Sausage)
Most low-carb stuffing recipes involve making or buying low-carb bread in advance. Or they use cauliflower instead of bread. For me, it’s not the texture I want.
However, with this recipe, you get a texture and taste that is very similar to a traditional high-carb filling. Without baking bread!
You can also choose to bake this filling in the oven or prepare the mixture for an instant oven version. Both versions are shown below.

This keto stuffing has basically the same ingredients as traditional stuffing. They are all very easy to find at the grocery store!
Creamy Garlic Salad Dressing Recipe
Most traditional butters contain onions and celery. Red onions have a slightly sweeter flavor, but red, yellow or white will work.
Plain pork rinds take the place of breadcrumbs in the fat. Always use regular pork rinds or the stuffing will taste weird. Look for quality brands like Epic that are low in fat.
The egg holds everything together. This is a very important ingredient and adds a little protein to the seasoning.
Creamy Caesar Dressing Recipe
The texture of bone broth is slightly thicker than chicken broth. You can use bone broth or chicken stock.
I used only two spices in this filling – sage and thyme. It’s also the main ingredient in chicken seasoning, so you can use it instead.

In a large skillet, melt the buttery flavored coconut oil (or butter or oil) over medium-high heat. Add chopped onion and celery and fry until soft.
Next, cut the pork skin into crouton-sized pieces and add it to the pan. Stir to combine with onion and celery. Remove from heat and allow to cool slightly before adding the beaten eggs.

Once everything is well mixed, pour in the broth and let the pork skin absorb the liquid. After the broth is wet, sprinkle with spices and mix.

Many high-carb filling recipes call for a slice of toast, stale bread, or croutons. You want something that absorbs the flavor while still retaining some crunch. So what is a good keto ingredient to use pork skin?
For this Thanksgiving Keto Relish pork rind, I recommend buying the Epic brand. They are a little more expensive, but of high quality.
Epic pork skin is baked, not fried, so it has a lower fat content. I think this is the best for the texture of the seasoning. Roasted pork skin retains excess fat, which can soak into the spices during cooking.

If you can’t find the Epic brand or are on a tight budget, regular pork rinds are fine. If possible, try to find a pork rind with less fat.

If you prefer the quick variety, you can make your own low carb mince mix with pork rinds to bake in the oven!
When you’re ready to cook the filling in the oven, add 3 tablespoons of the buttery flavored coconut oil (or butter or oil) to a medium saucepan.
Pour in 1 cup of water and the previously prepared spice mixture, then heat until boiling. After the water boils, reduce the heat and boil for about 5 minutes.

Next, add about 4 ounces of pork rinds (such as crumbled croutons) and mix. Cook for 1-2 minutes, scraping with a fork to absorb liquid.
Finally, remove the pan from the heat and close the lid. Let sit for about 5 minutes, then spoon over the keto filling and serve.
I’ve seen many recipes that use cauliflower instead of breadcrumbs, so that’s an option if you want a vegetarian or vegan dressing. However, with cauliflower seasoning, the taste and texture will be nowhere near the real thing.
