Season the chicken breasts and fry over medium heat until golden brown. (about 3-4 minutes on each side – the center should be 165 degrees). Remove to a plate and keep warm.

In the same pan, fry the onion until soft (I also scrape off some of the broth from the pan), then add the garlic and roasted red pepper.
