I love Thanksgiving (I mean, who doesn’t?!), but the more I learn to cook and the more I love cooking, the more I love Thanksgiving. . I’ll always watch the Macy’s Day Parade, hang out and appreciate Thanksgiving while my mom and brother work in the kitchen. At that point in my life, I didn’t want to be in the kitchen helping out either. I help with dinner, but that’s all I have to offer.

But in the last couple of years, I’ve really enjoyed Thanksgiving on a deeper level. I always love amazing food, but being involved in the preparation makes it even better. And being able to share my own creations like this pumpkin pie is even better.

This year, I am very grateful to the family that accepts me and never makes me feel sad about the way I eat for my health. It’s good because last year we put our toes in making an intolerance-free upgrade (gluten-free, dairy-free, soy-free and refined sugar-free), but in this year we are sure to expand. .

Making SCD means a lot of our dishes have to be changed or replaced, and while it may sound like a pain in the ass, it’s actually a lot of fun! My family loves to cook and love good food (and we all eat healthy, so I’m not an outsider), so we found this Thanksgiving a challenge. Don’t have potatoes? Don’t have a cup? Nothing is possible? it’s ok! And this pumpkin pie is the perfect accompaniment to our classic potato casserole.

And of course, I’m more than happy with this Thanksgiving menu: turkey (duh), fresh blueberries, a shallot dish my brother is making, a variety of vegetables, “mashed potatoes” from cauliflower and acorn squash casserole. . Oh, and baked pears with homemade coconut oil for dessert!

I mean, wow, does that sound amazing?! As drool-worthy as this year’s menu was, there was one dish that broke my heart a bit that I didn’t eat this year: sweet potato fries. Potato chips have been my staple since I was little. The creamy texture of the potato and the creamy goodness of the potato kept me coming back for seconds. I know there is no way I can go without my favorite dish, so I decided to figure out how to compare it to SCD.

The answer? SQUASH (but I mean when isn’t squash the answer?). I can honestly say that this pumpkin pie is dreamier than any potato dish I’ve ever tasted. It’s sweet, but not too sweet, with the addition of very sweet coconut. And the new cover? Heaven!
