Cottage Cheese Dressing Jamie Oliver – I was working from home the other day and the TV was on the cooking channel. without paying too much attention, i happened to see jamie olives mixing together and creating this lovely mixture of something white and creamy with olive oil, herbs and lemon juice. the volume had to be turned up. cottage cheese which he spread over the steak and beetroot. we always have cottage cheese on hand these days as our one year old loves it. it’s so great to have around. it can replace several ingredients, for example, sour cream on baked potatoes. I’ve never used it as a sauce or very creatively at all. this was something to try. so i did it. OMG. I couldn’t get enough.
Put the cottage cheese in a bowl and add the juice and finely grated zest of half your lemon. Mix in 2 pinches of extra virgin olive oil, the thyme leaves and a little salt and pepper. fold it all together carefully so that the olive oil and lemon marbling come through the cottage cheese. taste the pasta and squeeze in a little more lemon juice, if you like. (triple the recipe as Jamie’s doesn’t provide enough for leftovers. My son loves this dressing and eats it for snacks.)

So I’ve been going through my old cookbooks and decided to see what I can do with them (to justify keeping them). I noticed the Grilled Mushroom section of Jamie’s 15 Minute Meals and decided to try Veg it Up.
Easy Lunch! Caesar Salad & Cottage Cheese
If you’ve ever made any of Jamie’s 15 minute meals, they don’t take 15 minutes. Even as an experienced cook, they take me longer than that because of the crazy way they’re written — think about prepping bits of this while you do that and that. So when you go out to make one of those 15 minute meals, give yourself half an hour and you’re on the right track.
Most of the recipe is pretty vegetarian friendly, so I replaced the Pancetta with some Cheatin’ Ham Style Slices instead – and they worked surprisingly well. The recipe said it was for four, but we devoured the sub between us along with most of the salad. The rest of the salad made a perfect picnic the next day with some cooked chickpeas added.
I don’t have a frying pan so I used my sandwich press. A frying pan works just as well. Substitute the sandwich press for your version as you go through the recipe.

Place the mushroom stem down on the press and let it cook for 10 minutes (turn if using a frying pan)
Meanwhile, remove the leaves from the chives and chicory and place them in a large bowl, add the watercress, chopped radish, cucumber and walnuts then add the chopped gherkins on top
Place the cheese over the side of the mushroom stem, sprinkle over the thyme and place under the grill
Healthy Vegetable Dip (high Protein)
Cut the pears into quarters and place on the sandwich press grill until charred and soft (about 5 minutes)
Cut the ciabatta in half and sprinkle the inside with a little olive oil, put on the sandwich press to toast
In a bowl, add cottage cheese and grate lemon zest and squeeze in the juice, add to the side.
I Always Forget How Much I Like Cottage Cheese
In another bowl for the dressing, combine the olive oil, cider vinegar, honey/gaff and mustard and mix until fully combined.
Cut the cheese mushroom into strips and place on top of the ham, followed by sliced tomatoes and cottage cheese
Cut in half and serve immediately (with napkins handy as it can get a bit messy!) Serve the salad alongside drizzled with the delicious sweet mustard dressing

This is delicious and messy in equal measure, so make sure you have some napkins handy and don’t try to impress anyone – it’s not easy to impress when you have cottage cheese oozing through your fingers!
So that’s my vegetarian version of Jamie’s 15 Minute Meals Grilled Mushroom Sub and I’ll definitely be making it again! The combination of sweet, salty and a variety of textures makes it completely satisfying. We’re not usually the type to have a sandwich for tea, but this is satisfying and worth doing in the evening. The salad went great with leftovers the next day too, so that was a bonus!

I have to admit this is a Jamie Oliver recipe. I usually make my own recipes, or copy them from restaurants I like, but this time I watched Jamie Oliver’s show… and after trying this, I have to share it with you It’s not only very healthy because of its clean ingredients, but also extremely easy and quick to make. A light and clean lunch or appetizer, prepared in just five minutes.
In a bowl, mix the cottage cheese with the peel (very finely grated) of half a lemon, then add the juice of half a lemon, as well as a pinch of salt and pepper – mix well with a spoon and set aside. .
Cooking Jamie: Puff Pastry Pizza
Take a separate bowl and mix the tomatoes (halved) with vinegar, olive oil, basil leaves (tear roughly with your fingers) and a little salt and pepper, then mix gently with your hands. Now pour the tomatoes on top of the cottage cheese, also add the rest of the juice, then garnish with more basil. Before eating, mix well to add the creamy texture to the tomatoes.
