Acorn Squash In Vegetable Soup – Every shop I was told brought home from the farmers market made enough for a small village, only doubling at the grocery store because it was always sold out. This warm Acorn Squash Soup with rich flavors is my latest and greatest way to work through my supply.
As we approach the fall and winter months, it’s easy to get frustrated with the lack of fresh, seasonal produce. But don’t doubt that a trip to the winter market (or the seasonal section of the grocery store) will lead to a healthier and more satisfying meal.

I’ve already stocked this orange soup in my fridge for the last few weeks and I’m looking forward to the cold fall days when orange soup is needed. Last weekend, that day finally arrived. Saturday is here and it’s cold and wet and I know this avocado soup will hit the spot. I made a hot pot for lunch and enjoyed it so much I cleaned up the leftovers on Sunday. This week I will definitely do more.
This balsamic soup is flavorful (but not creamy!) and goes well with garlic, hot garlic, and cayenne leaves. For a kick. I can’t recommend it enough if you’re trying to keep warm in cold weather.
Roasted Vegetable Soup
First, mince the sausage. Cut the squid in half vertically and remove the seeds. Brush the cut area with olive oil and sprinkle with salt and pepper. Fold the sausage in half, placing the bottom on a lined baking sheet. Wrap the garlic in a paper with olive oil and put it in the paper. Bake at 400°F for 35 to 45 minutes or until sausage is tender.
Then boil the soup. Add the onions and carrots to the ingredients. Add 2 1/2 cups of roasted squash, minced and grated garlic, pepper and pickles. Simmer for 20 minutes, stirring occasionally, to infuse the flavor.
Mix at the end. If necessary, transfer the soup to a blender and puree until smooth (a whisk also works!), add the lemon juice and maple syrup and blend again. Season to taste, and enjoy!

Not only is this soup healthy and delicious, but it’s also easy to make, requiring only 10 key ingredients that you most likely have on hand right now and only takes about 1 1/2 hours to prepare. e (including grilling).
Acorn And Butternut Squash Soup
The base is a mixture of onions, garlic and vegetables of your choice! I went with a combination of carrots and butter, but winter carrots or other lovely root vegetables will do here (think carrots and almonds).
Then the fun part. Are you going to add nuts? soy? Hey? Plant leaves? Or go with the Curie adaptation? You decide.
To keep it simple, I added a little fresh scallion and bay leaf to add lots of flavor to the classic fall soup. And for protein and fiber, I added red beans because they cook faster (in soups!) and taste better.
Kale & Roasted Squash Soup
While the soup comes together, cook in the pan until golden brown, soft and sweet. However, if the oval dish seems a little too much for you, you can skip this part entirely and the recipe will be a 1-pot, 45-minute wonder. How nice?
