On to the next classic in the How Sweet Eats Thanksgiving series…this one is a real favorite. We’ve had some unusual weather the past few days, so this is the last real norm until next week. But I promise it’s worth it.

Now I know I share in my family’s tradition when Thanksgiving comes around. And green bean casserole isn’t something we’ve had recently. Some people are completely bent over the plate, while others just can’t get enough. Some do not like mushrooms, others are afraid of the feeling of a large casserole on the plate.
Vegan Green Bean Casserole From Scratch
If you’ve been following along, you might remember this Light Green Bean Casserole. That is very good. I even did it over Thanksgiving! It’s been a staple for almost a decade now and I know many of you do it every year too.
I also want to make the fun and pretentious version for you. Especially since someone like Mom would never do the light version. Ha!
In this Green Bean Casserole we make our own mushroom sauce and use fresh green beans that retain a lot of flavor. I love it, because the only thing I really don’t care about in a regular green bean casserole (read: one that uses canned or frozen green beans) is how the green beans can get soggy.
Crockpot Green Bean Casserole {from Scratch!}
These green beans are still tender. The Mushroom Parmesan Cream is really delicious. It’s not too heavy and the beans in it don’t sink.
I’ll be the first to tell you that I sometimes use crispy fried onions this season. They look great and require a little more work. Since I showed you how to make it from scratch, I want it to be the real deal. If you want, you can make these fried onions below which are totally addictive. You won’t be able to stop eating them when you make this casserole.
There aren’t many options here, but I have to say that the rest is so nice and sweet, without the onions going a little cold.

Second, I think everyone should eat whatever they want on Thanksgiving, traditional or not. Which is the exact opposite of #1 above. But I said I have an idea. I didn’t say it had a logical reason!
Third, there will never be canned soup near my beans*. Not at Thanksgiving, not at Christmas, not ever. The sweet mushroom sauce is easy to make, tastes better and for the cherry on top – it doesn’t contain all the artificial stuff.
*For the innocent reading this, there are plenty of quick and easy recipes “out there” that don’t involve much more than throwing canned mushroom soup, canned green beans, and canned fried onions into a baking dish.

And that, my friends, is all I have to say about Green Bean Casserole! This tradition has been around for a long time, probably since I was 20 years old when I had it at the first Thanksgiving I attended in Sydney (and I’ll never say how long, a woman’s age will remain a mystery, forever!) .
Ahh, memories of the turkey that went wrong in the oven at home, the weirdly fluffy pumpkin pie, and the dry homemade rolls I served for the party. We cut up the turkey, bought a roll, and reclaimed the pasta by shredding it and serving it as a sundae with cream and ice cream (deeeelish!).

Loaded Green Bean Casserole Recipe
1. Panko Breadcrumbs: Larger pieces than regular breadcrumbs for a more satisfying CRUNCH. Asian aisles in most supermarkets these days, although Asian stores are cheaper.
2. Oil – where there is a high temperature neutral oil tastes good here. Do not use olive oil (low smoke).
4. Plate: It is better to use one that is flattering and not deep, so that you can increase the surface of the onion. Larger tent, oversized glass tray 9 x 13″ / 23 x 33″.

5. Onions are too fast: turn off the oven, cover with aluminum foil for the rest of the cooking time. Then remove the foil for a few minutes to fry the onions. That’s why it’s so important to fry the onions until they’re a little golden, so they’re golden and sweet when they’re done.
6. Make ahead – the best way: cook beans and make sauce for each recipe. Immediately cover the sauce, cool and refrigerate for up to 3 days (can be longer, I only did 3 days). Fry the onions the day before, cool completely before storing in containers. Do not refrigerate! On the day of, mix the beans with the sauce, place in a baking dish, COVER and cook for 10 to 15 minutes to warm through. Remove the lid, add the onions and cook for 10 minutes to fry the onions and turn golden brown!
8. Portion Size – It really depends on how many other sides you have! Being conservative, it can easily serve 8-12 with 3-4 other options (ie one large scoop per person). If this is the only side of vegetables, I would add 5 people (150g beans per person).

The dish is for 8 people, considering that the onion used for the topping contains 2 tablespoons of oil, which I think is a fair estimate (since onions don’t absorb oil).
