One of my favorite meals this time of year is turkey soup. This turkey noodle soup has the same comforting ingredients as classic chicken noodles and is perfect for using up leftover turkey.
Turkey Carcass Soup
I always make this using leftovers from the holidays! You can cook and use any part of the bird in this turkey soup recipe. However, if you don’t have any left over or want to make it at a different time of year, you can make my turkey soup without the carcass. This Chicken Noodle Soup is the perfect soup for when you’re feeling under the weather!

Turkey Stock Recipe
Turkey soup can be frozen. To freeze a turkey carcass, first refrigerate it and then transfer it to an airtight freezer container. Be sure to leave at least half an inch of space at the top of the container to allow room for the liquid to expand. Store in the refrigerator for up to 1 month. When ready to use, thaw the soup overnight in the refrigerator before carefully reheating over low heat in the oven or microwave.
Place the turkey carcass in a pot of water and bring to a boil. After boiling, reduce the heat and simmer for 2 hours.

This turkey carcass soup is rich and delicious. After carving, we always keep the bones of the turkey, as well as the skin, which we are not interested in eating, and usually the wings. Turkey bones simmered for several hours with meat and skin make a rich, flavorful stock.

Boil the turkey bones in spiced water for three hours, then strain the rich broth and discard the bones.
It’s up to you if you want to remove the oil layer on top of the stock. I don’t do this because the oil adds too much flavor.

If you decide to defat it, it’s easier if you chill the stock completely in the refrigerator. Fats will float to the top and harden, making it easier to remove. After that, you can heat the stock and start making the soup.
Oh yes! If you don’t want to make the soup right away, the carcass can be frozen for up to four months. Let it cool completely, then wrap it in plastic wrap and foil.
I do not recommend this. That meat had been cooked for hours and would be very dry. It is best to avoid it. It shouldn’t be much anyway.
Leftover Turkey Soup Recipe {with Homemade Turkey Broth & Vegetables}
Oh yes! Simply add half a cup of heavy cream to the strained broth, then add it to the pot with the roasted vegetables and gently heat the soup for a few minutes, being careful not to boil.
I usually serve this soup as our main meal. Instead of serving cups of it as appetizers, I serve generous plates. It makes the perfect post-Thanksgiving dinner—relatively light, delicious, and comforting.
If you want something on the side, try almond flour keto bread (great for dipping into soups!), cornbread, keto crackers, or thick slices of these delicious keto cookies.
How To Make Turkey Carcass Soup
Leftovers will keep well in an airtight container in the refrigerator for up to 3 days. I cover their bowl or mug and microwave on 50% power.
You can also freeze some parts in a mug. Cover them with several layers of plastic wrap.

If you want to make turkey soup from scratch, you need to start using your leftover turkey, whether it’s from my deconstructed turkey, this is the best way to use up your roast turkey, this soup is packed with healthy veggies, bananas. , lean turkey and homemade gravy. I also love cooking wild rice in a bowl!
Take the roasted turkey, remove all the meat from the bones and place in a bowl. Break off the turkey carcass where it can be dipped into the soup pot. Also remove all skin and fatty parts.
Place the turkey pieces in a large pot. Now you need to add spices. Quarter a large onion, quarter 2 carrots, 2 stalks of celery (if you have some amazingly flavorful leafy heads, add them!). Add 2 tablespoons of salt, 5-6 black peppercorns, 3 bay leaves, and 2-3 sprigs of fresh parsley if possible, then cover the turkey with water. Simmer the turkey for 3-4 hours until the bones fall apart, the meat falls off the bone, and the stock is nicely colored.
Creamy Turkey Noodle Soup
Carefully remove the meat from the soup pot and set aside. Strain the broth through a fine mesh strainer and return it to the pot.
Add the rest of the soup ingredients and cook until done.
