We’ve been on Thanksgiving planning a lot around here lately. Meaty turkey, mashed potatoes, rolls, pie, and the infamous potato casserole. It’s not a lie, this is so good to have as a side dish, but somehow it’s still missing that we call this “vegetable side” every year.

Loaded Sweet Potato Casserole Recipe
In the United States, the terms “Sweet Potato” and “Yam” are used interchangeably and refer to the similarity of the potato species with red flesh and orange flesh. But, you see something in the grocery store labeled white potatoes, while your flesh is labeled orange yams. Guess what? Both potatoes! The type of potatoes you think of as sweet potatoes are just black and white potatoes. You will rarely come across real breasts in an American grocery store. True breasts have brown or black skin and flesh that can be red, purple or white.
We choose the potatoes in our pantry to be brown, both for flavor and color! But you can use any orange or white fleshed sweet potato.
Marshmallows are a little big in a casserole dish and are hard to eat and can burn. We like the ratio of the gooey center to the crispy outside in the mini marshmallows, and recommend sticking to the mini variety. If you just have large marshmallows and in a pinch, use clean kitchen scissors to cut them into pieces for filling. Spray decoction sprinklers will help with all fixing problems.

This recipe is written for raw potatoes and we highly recommend using it for the best results. If you have everything canned, we can work with it! Just skip the second step of the recipe where you cook your potatoes. But drain your cane thoroughly and mix it with other things and put it in your dish. You will need 1 1/2 to 2 pounds total, but always use a smaller recipe if you want to measure it.
Store the rest in the refrigerator for up to four days, and simply reheat in the microwave in 30-second increments until warm. If you want to bake a large batch at a time, you can slide the entire casserole dish into an oven preheated to 350 degrees Fahrenheit until heated through.

I’ll be honest, I’ve never been a fan of big carpets. There was always a side dish at Thanksgiving that I would skip, or only get a small amount of, because I felt guilty. That is, until I found this sweet potato casserole recipe.
This is similar to other sweet potato casseroles with similar flavors – but my favorite part is the caramelized pecan topping! Crunchy pecans add a lot to a casserole, giving it more texture and flavor than other recipes. Add gooey marshmallows on top and it’s all done.
It’s all sweet and delicious, and the pecans are crunchy on top! Even my two year old loves them, and when we can get him to eat anything vegetable!

I made this sweet potato casserole every Thanksgiving that I can since I started making it five years ago, and you better believe I’m going to make it again this year. Perfectly paired with your fried potatoes, mashed potatoes and gravy, rolls and jello salad. What else do you have for your Thanksgiving meal?
Start cooking your potatoes. You want to peel them and cut them into cubes to cook quickly, then add to boiling water and cook for about 20 to 25 minutes, or until you can pierce the pieces with a fork. Drink water.
Mash the farraam potatoes in a large bowl with a potato masher, or some forks, or whatever you have, until you have the consistency (you will mix more with the other ingredients added, make sure you don’t break them).

In another bowl, make your pecan jelly. Mix with brown sugar, flour, butter and chopped pecans until smooth and fluffy.
Spread the marshmallows evenly over the top and bake for a little more time until they are puffy and golden.
You can make this sweet potato casserole ahead of time, prepare the potatoes, add to the pan, and cover the pan in the refrigerator overnight, or up to three days.

You can also make your pecans ahead of time, but I store them separately, in an airtight container, or ziptop bag, until I’m ready to cook the dish, so that the mixture doesn’t soften at all – sprinkle on top. when you are ready to cook.
You can also freeze sweet potato casserole before cooking for up to three months. Cover with plastic wrap and foil and store. Then refrigerate overnight before cooking.
If you end up with some leftover sweet potato treats, you can store them in the refrigerator or covered with a lid. Store in the refrigerator for up to 5 days. When you are ready to enjoy the leftovers, you can eat them cold, or heat them in the microwave until warm.
