The absolute key to making this soup so delicious is roasted butternut squash. When you roast butternut squash low and slow, it releases the natural sugars, which in turn caramelize. It completely changes the taste. I don’t know if you’ve ever made soup from boiled potatoes or even sweet potatoes, but the taste of this soup is next level in comparison.
In the recipe we are going to add a few whole cloves of garlic. The roasted garlic complements the flavor of the squash. When you roast garlic, it becomes very sweet and nutty. No need to peel the garlic, just smash it right into the squash (I mean Mom, how neatly do they fit in those dimples!?).
Important Tip #1 – Roasting the pecans can take up to an hour, so don’t be tempted to turn up the heat and rush. It takes time to get really soft, buttery and caramelized butterscotch – it makes all the difference!
