Mom’s Turkey Soup Recipe
Place the turkey pieces in a large skillet. Now you must add the spices. Throw in one large onion cut into quarters, 2 carrots cut into thirds, 2 stalks celery (if you have those amazing tasting leaves, add them!). Add 2 teaspoons of salt, 5-6 peppercorns, 3 bay leaves, 2-3 sprigs of fresh parsley if possible and cover the turkey with water, just on top. Simmer for 3 to 4 hours until the bones of the turkey begin to break down, the meat falls off the bone, and the broth is a nice color.
Carefully remove the casing from the pot and set aside. Strain the broth through a fine mesh strainer and return to the pot.
Add the rest of the soup ingredients and cook until the vegetables are soft and the rice is completely cooked.

This time of year, one of my favorite dishes is turkey carcass soup. It’s a turkey noodle soup with the same comforting ingredients as classic chicken noodles and is perfect for using up leftover turkey.
I always make it after the holidays using leftovers! You can use every part of the bird by cooking it in this turkey soup recipe. However, if you don’t have any leftovers or want to make it at another time of year, you can make my carcassless turkey soup. It’s a great soup for when you’re feeling under the weather, like chicken noodle soup!

Turkey soup can be frozen. To freeze turkey carcass soup, let it cool first and then add it to an airtight container in the freezer. Be sure to leave at least half an inch of space at the top of the container to allow room for the liquid to expand. Store for up to 1 month in the freezer. When ready to use, let the soup thaw in the refrigerator overnight before reheating it over low heat on the stove or carefully in the microwave.

If you decide to skim it, it will be easier to do so if you let the broth cool completely in the refrigerator. The grease will float to the surface and harden, making it easier to remove. Then you can heat the broth and continue making the soup.
Yeah! If you don’t want to make the soup right away, you can freeze the carcass for up to four months. Let it cool completely, then wrap in plastic wrap and aluminum foil.
