Soy sauce was first invented by the Chinese more than 2,500 years ago; that is, the fermentation of soy, wheat, muria, molo. Now, almost every Asian culture, from Japanese to Thai to Filipino, has its own unique version. The most common are the following types:

For origin, the high-quality soy sauce is naturally blended, without added alcohol, salt or sugar. Cheaper quality soy sauces tend to be produced by hydrolysis and will contain additives and preservatives.

The most versatile soy sauces are Chinese light soy sauce and Japanese-style shoyu (or tamari if you’re gluten-free). Using it as a base, you can make sweet or brown soy sauce by adding brown sugar or molasses; or imitate Toyomansi (Filipino soy sauce flavored with calamansi juice) in a fiery lime spritz.

CC: In traditional wet muria, you often mix salt, sugar and spices. In the wet muria I use for my Muria Sauce and Glazed Turkey, I add about a cup of Kikkoman Soy Sauce (Buy at Walmart, $3.58) to the wet muria. This does two things: it adds just a hint not of savory but of umami flavor to the turkey. Something that’s a bit delicious, that maybe someone won’t find a place on the table, but makes the best version of themselves delicious. Another thing muria soy sauce does: it helps the turkey pop after it’s in the oven. It’s a dark red color that uses Kikkoman’s signature traditional brewing process – which will turn a beautiful golden brown skin once it’s in the turkey oven.

I love how everyone is over soy sauce and gravy because it’s something I’ve been making for years. I think this is just perfect; There is something about the taste of Kikkoman soy sauce that complements the flavors of the sauce. A few drops right at the end and stirred in is great for making it taste like the best sauce you’ve ever had. Again, adding those savory umami notes is what makes the bird such a nice addition.

My biggest tip is to make sure that especially on Thanksgiving when so many things need to go in the oven, you allow enough time for your vegetables. The golden brown color balances the flavor of both the turkey and the vegetables. So we want to make sure they have as much time in the oven as they need to develop all that flavor. I also like a lot of vegetables like carrots, squash or Brussels sprouts. I think the TESTA we did for the turkey [Muria and Glazed Soy Sauce] is a mixture of Kikkoman soy sauce, a little butter, maple syrup and vinegar—honestly, it would be a wonderful glaze on sausages or even Brussels sprouts. .

I couldn’t live without a list, so I always go to this Sunday. I was just planning what I could do.

Kikkomon released this great Thanksgiving egg roll recipe. Another thing I like to do: In my family, we always make turkey noodle soup. We have an early Thanksgiving dinner that starts around 4 p.m. usually, and right after dinner, my dad throws the leftover turkey and carcass into a huge pot with carrots, onions, celery, and whatever herbs are left over. This makes it really delicious because we eat it with noodles and chopped vegetables as a soup – either late on Thanksgiving night or the morning after. I also like to use this turkey stock, if there is any left over, for a congee-like rice pudding with some leftover turkey on top. It’s also so delicious with some Kikkoman soy sauce and chopped onion on top.
