5. Onions cook too much – lower oven, cover loosely with foil for remaining roasting time. Then remove the foil in the last few minutes to chop the onion. That’s why it’s important to fry the onions until browned – so they’re deep golden and crispy once they’re done!

6. Prepare Ahead – Best way: Cook beans and make sauce according to recipe. We immediately cover the sauce, refrigerate, then put both in the refrigerator for up to 3 days (maybe more, I only did 3 days). Fry the onions the day before, cool them completely before putting them in the container. Do not put in the refrigerator! On the day of, toss the beans with the sauce, place them in a baking dish, cover, then bake for 10 to 15 minutes to warm through. Remove the lid, top with the onions, then bake for 10 minutes so the onions are crispy and golden!

8. Portion Size – It really depends on how many other sides you have! Conservatively, this will easily serve 8 – 12 with 3 or 4 other options (ie one large scoop per person). If this was the only vegetable side, I’d say it serves 5 people (150g/5oz beans per person).

The meal is for 8 people, the onion used for the dressing is supposed to have 2 tablespoons of oil which I think is a reasonable estimate (since onions don’t absorb oil).

Something more balanced for your plate. Something easy to sit next to mashed potatoes and sweet corn casserole (coming soon!). You’ll start slow and steady by making a roux seasoned with onion and garlic. You’ll use it with some white wine (so good!) and stock, then some soy sauce to keep that umami flavor. Did I mention I sprinkled some gruyere in that sauce too? Because I did. I certainly did. And the result is wonderful.
