I had a delicious Green Bean and Artichoke Casserole – fresh green beans, artichoke hearts, breadcrumbs, pomegranate molasses and French fried onions. This is not Grandma’s Green Bean Casserole! Mushroom soup is not a genius cream.

This Green Bean and Artichoke Casserole is easy to make. Start by sauteing the onions in olive oil. Add the chopped green beans and garlic and cook for a few minutes. Mix in some diced knuckle hearts, Italian breadcrumbs, Italian seasoning, Parmesan cheese, heavy cream, and cayenne pepper. Transfer the mixture to a 9×13-inch baking dish and top with the French-fried onions. Stick it in the oven and you’re done!

I used mushrooms because traditional recipes call for cream of mushroom soup, but you can certainly leave them out. If you do, I recommend using a large onion instead. This thickens the sauce and adds extra flavor. It’s entirely up to you!
