I grew up eating “Doc Billings Stuffing” at Mrs. Loomis’ house on Christmas Day, but I didn’t learn the story behind the name until I was older.

Eleanor Loomis was a consumer education specialist at the University of Minnesota Extension Service in the 1950s. She appeared on television every week and shared shopping tips, recipes and cooking techniques. One week the theme of her show was Thanksgiving and she brought in a special guest, Doctor Billings. Doctor Billings was a turkey specialist in the extension service. For that episode she created her stuffing recipe – a rosemary-scented liquid stuffing with apples and onions.

Dr. Billings was surprised at how wet his stuffing looked and threw a handful over the roof. The cameraman followed the action all the way, seeing balls of stuffing stuck to the ceiling of the studio. Mrs. Loomis was disappointed, her story became legend in my family and I always liked apples and onions in the stuffing. I also love corn stuffing and oyster stuffing, and I’m really just a stuffing lover. Or call it dressing if you prefer–I’m not carving my dick in any way.

Note: This filling is best (and so will your stress level) if you bake the cornmeal a day or two ahead of time, refrigerate it, and dice it up. Leave the cubes in a bowl or tray on any flat surface you have for most of the day to dry out a bit (I keep them covered overnight). I either make half the recipe in my 7 inch cast iron skillet, or I make the whole recipe and use half for the cornbread and half for the stuffing in this Vegetarian Sweet Potato Chili Cornbread Breakfast Casserole. Another note: When I serve this at Thanksgiving, I’ll prep the cooked veggies ahead of time and dice up the cornbread and mix the whole thing together in a bowl while I roast the turkey. For this recipe, use two boxes of Jiffy Corn Mix and follow package directions, adding two eggs and ⅔ cup milk. Pour into a greased 9×13 inch pan and bake at 400 degrees for 20-25 minutes. Keep it aside and let it cool completely.

In a large skillet or large Dutch oven over medium-high heat, cook the Jimmy Dean sausage until cooked through and no longer pink. While cooking, break up pieces of sausage with a wooden spoon. Remove from the pan with a slotted spoon and set aside.

When ready to bake, preheat oven and grease a 9×13 pan or baking dish. Add the chicken stock and egg to the corn filling and stir to combine.

Pour into the pan and bake, covered, in the preheated oven, removing the aluminum foil for the last 10 minutes of baking, until the filling is golden brown.
