Add 4 cups of apple cider vinegar and all your salt. (see recipe for salt requirements below) into a small saucepan. Bring to a boil until the salt dissolves. Remove from heat and add ice to cool the liquid.

As a food blogger I always try to stay ahead of the curve. This often means cooking the recipe a month or more before it’s in season. It’s not Thanksgiving. And I almost ate my fill of turkey. Almost because our first turkey failed. But read on to see how I changed things up.

In early October We roasted a turkey to try a recipe flavored with maple butter. Alas, it was dry and disappointing even with lots of butter! Now it might be because that turkey has been in the freezer since the last sale. (Lessons learned 🙂 Or just need a little more love?

We attached an oven thermometer to the air probe to make sure the temperature was in the safe zone (below 40F). It stayed in the 35 degree zone for over 24 hours and worked like a charm.

Remove the turkey from the brine, pat dry, and it’s ready to cook! We love pairing this brine with a roasted turkey recipe. It has always been famous for its smoky flavor and juicy meat.
